We start this vlog out on a field trip to the top of the mountain in Montreal. As a SAHM I find that I have to get involved in local groups and trips to keep my baby occupied. So, I was relieved to be able to take him to a forest school. It’s one of the many fun things to do in Montreal in the summer.

The real struggle as a hijabi was trying to keep my son from messing up my hijab as we walked lol.

The next part of this vlog is focused on my fave thing, food! I tried to offer recipes for iftar ramadan that would be delicious, but also practical.

The first iftar was a fried crispy garlic shrimp. This is the recipe for that.

1lb shrimp, peeled and deveined
3 tbsp flour ( you can opt for a starch instead for gluten free)
1 tsp paprika
salt and pepper to taste

Combine and fry at medium heat for about 2 mins (just until done, do not overcook the shrimp!)

In a sauce pan, combine:
3 tbsp butter
3 crushed garlic cloves
salt and pepper to taste
1/4 cup parsley (chopped or dried)

Toss the cooked shrimp into this mix for about a minute and voila!
Trust me, you’re gonna wanna make this over and over again. It’s amazing.

The next iftar I prepared baked chicken wings crispy style that were also out of this world. Why baked? I don’t want my condo to smell of a deep frying, I don’t want to stand by the stove top and risk splashing any oil onto my baby or myself and they’re a lot less greasy this way as well, but still juicy and crispy to satisfaction. Don’t believe me? Try it! You’ll be wowed by how great this technique is.

The two most important steps are:
1) Render the fat – I explain this in the video
2) Baking Powder and Starch – also explained in video, but basically it absorbs any liquid and dries the skin.

This family friendly meal will impress everyone. It’s so easy and you’ll probably keep it up your sleeve for an easy dinner fix.In fact, it’s quite likely it’ll be seen in my future what I eat in a day videos as well.

For the chicken wings you will need:
1 lb sectioned chicken wings
3 tbsp corn starch (potato starch works too!)
1 tsp paprika
salt and pepper to taste

Combine and lay on oiled or nonstick baking perforated rack.
Then place in oven at low heat 300F (less than 150C)

In a sauce pan, combine:
1/2 cup ketchup
2 tbsp BBQ sauce or 1 tsp liquid smoke
1-2 tbsp hot sauce (optional)
3 cloves garlic, crushed (mine was in the hot sauce)
2 tbsp honey or brown sugar
3 tbsp chinese soy sauce

once thickened, turn off heat.
After 30-40 mins in oven, turn up heat to 400F or 200C and bake for an additional 30-40 mins.

Once done, pile into sauce pan and coat the wings in the sauce.

The smell of these while fasting Ramadan were difficult to resist, but so worth the wait.
