I am OBSESSED with banana pancakes. Breakfast is my favorite meal of the day. It is also the most important. I firmly believe that if you start your day off right with good tasting, healthy food, it sets your day for success! I have tried a number of banana pancake recipes and this one is by far my favorite. I really think baking the pancakes make all of the difference. Thank you Mimi Ikonn for sharing this amazing recipe. If you don’t follow her on youtube, you really should. She’s the best!

2 ripe bananas
2 tablespoons almond butter
1/4 teaspoon baking soda
Preheat oven to 400 degrees F
Mash the bananas with fork until smooth and slightly lumpy.
Add the eggs, almond butter and baking soda and mix together.
Line a baking sheet with parchment paper. Pour the batter onto the baking sheet, using approximately 2 tablespoons for each pancake.
Bake for 15 minutes, or until lightly browned.
