Healthy Falafel Recipe – Vegan
These falafel are super tasty and really easy to make. They pack a protein punch thanks to the chickpeas and are great for lunch or dinner.
1 can chickpeas, rinsed, drained and patted dry
1/3 cup chopped coriander or fresh parsley
4 cloves garlic, minced
1 onion or 2 spring oninos
2 Tbs sesame seeds
1/ 1/2 tsp cumin
1/4 tsp sea salt and black pepper
pinch of ground cardamom and coriander
3-4 Tbs plain flour
3-4 Tbs grape seed oil (for cooking)
Panko bread crumbs (optional)
Add all ingredients to a blender and pulse / mix to combine.
Cover and refrigerate for 1-2 hours to firm up.
Once chilled, scoop out spoonfuls and roll into balls. Gently roll in bread crumbs before lightly frying in oil.
Cook for a few minutes on each side.
