Ever tried making Pizza at home? It’ll take you multiple tries to figure out what works for you. It’s all about slow rising and fast baking.
Recipe i ended up using:
180 grams 00 flour
120 grams all-purpose flour (unbleached if possible)
8 grams fine sea salt
4 grams of white sugar
2 grams active dry yeast
4 grams extra-virgin olive oil
1. combine flours and salt.
2. in your mixing bowl: 200g of lukewarm water + yeast + olive. Let sit for 5mins. Slowly pour and mix it with the flour mix. Combine and let sit for 20mins.
3. Knead for about 5 mins. Rest covered for 15mins. Knead again for 5mins. Let rest and rise for 1 hour. Knead for 3mins, separate into 2-4 portions. Let rise covered for 24 hours.
4. The next day take out the dough and rest for 45mins before using.
5. Cook at maximum temp until cooked. The hotter and faster, the better.
