This is quite the exclusive and yet a very old recipe of mine and finally bring the power of sugarfree jelly powder to the potential of the no bake cheesecake. The jelly not only brings a delicious strawberry flavour but also helps the cheesecake set so you might have to leave it for much less time in the fridge. The amount of cream to almond milk is for you to split and decide and know that almond milk could also be replaced with simple water if you want for an even more delicate flavour. The original recipe uses ground brazil nut for the crust as it’s the lowest carb nuts you can find (3g per 100g), but of course almond will work as well.

Ingredients (make a big pyrex dish / 30 bars):

Crust

450g / 1lbs brazilnut ground (almond will work too, but I just blitzed brazil nuts in the blender)

30g / 1oz sweetener (or 30 drops liquid sucralose from my recipe here)

23g / 0.8oz (2sachets) sugar free strawberry jelly crystals dissolved in 250ml boiling water

240g / 8.5oz full fat soft cheese

60g / 2oz double cream (can use coconut milk too)

500ml / 2cups unsweetened almond milk (can be replaced by water it will be slightly lighter)
