Heat your oven to 425 degrees Fahrenheit. I’m using 1.5 pounds/680g of chicken wings – feel free to double or triple the recipe. In a bowl, add the chicken wings, 1 tsp salt, ½ tsp ground black pepper and 1 tsp garlic powder. Mix really well. Place the chicken on an oiled baking sheet. Cook in the oven for 20 minutes. Take them out, turn over the wings and cook for another 20 minutes. When the wings are almost done, make the sweet and spicy sauce.
In a saucepan, mix ½ tsp ground ginger powder, 1 tsp soy sauce, 1 tsp apple cider vinegar, 4 tablespoons Sriracha or your favorite chili sauce, 2 tablespoons honey and 2 tablespoons butter. Bring this to a boil and turn off the heat.
Place the cooked chicken wings in the sauce and toss in the saucepan. Heat the sauce for about 2 minutes coating the wings until it almost caramelizes on the wings. If you’re using a large quantity of chicken, make the sauce in a large pan so it’s easier to mix the wings.
