Today I will be showing you a TRADITIONAL NYONYA COOKIES called KUEH KOJA. You will need no baking powder, no yeast, no baking soda or any additives. Its a healthy beans cookies made from beans to cookies.
Ingredients needed are
275gm Split green peas (split mung beans)
165gm icing sugar/powdered sugar
120ml thick coconut milk – boiled and cooled
Mould or cookie cutter.
Wash and soak the split mung beans overnight or at least 4 hours.
Sieve and dispose of water but do not remove the green skin of the split mung beans. Place into a steamer bowl.
Steam for 30 minutes. Remove and cool it.
Heat a strong frying pan. Fry the cooled split mung beans WITHOUT oil, at low to medium heat till it is completely dry but take care not to burn the beans. Keep stirring while frying till it is completely dry.
Remove to cool.
Place the dried split mung beans in miller/mortar to pound it or using the miller to make it into a fine mung bean flour ( sadly to say in the video I used a blender to safe time but my flour turn out a bit coarse)
Mix the split mung bean flour with icing/powdered sugar thoroughly and slowly dribble the thick coconut milk and combine to make into a rough dough as show in the video.
Now if you are using cookie cutter, form a dough and roll out the dough and using the cutter , cut the cookie and place on to baking sheets.
If you have a wooden mould of your choice, press the dough into the mould, clear the excess dough and then give a knock to release the dough from the mould. Place the ready cookie on to baking sheet for baking.
Baking time varies from oven to oven.
I baked the cooked on a lower middle level at 150C for 25 minutes.
You can bake at 160C for 20minutes but keep a watch that you don’t burn your cookies.
Remove and cool. YOUR COOKIES ARE READY!!!
