Vegetarian Nachos with Guacamole 🥑 | Baking with kids

This is an easy Vegetarian Nachos recipe that comes together really fast. Make it more fun by putting your budding chefs to work! Serve as an appetizer at your next party or as a snack dinner for movie night!

Ingredients:
For Guacamole:
2 Ripe Avocados
1 medium Tomato – chopped
1/2 medium Red onion – chopped
2 tbsps Fresh Lime Juice
3 tbsps Fresh Cilantro – chopped
Salt (to taste)

For Vegetarian Nachos:
1 1/2 cups Black Beans – cooked (or one 15 oz. canned black beans drained)
1 tsp Taco Seasoning mix (or equal parts Salt, Cayenne powder and Cumin Powder mixed together)
20 oz (1 large bag) Tortilla Chips
1/2 medium Green Bell Pepper – chopped
1/2 medium Red Bell Pepper – chopped
1/2 cup Frozen Sweet Corn – thawed
2 cups (16 oz) Mexican cheese blend (mix of cheddar and monterrey jack) – finely shredded
3 tbsps (15-18 slices) Pickled (or fresh) Jalapenos – sliced
1/2 cup Sour Cream
2 tbsps Fresh Cilantro – chopped (for garnish)
